Kimchi Fried Rice with Spam

Kimchi fried rice, known as kimchi-bokkeum-bap, is a beloved dish in South Korea. For optimal flavor and texture, leftover chilled rice and kimchi are typically preferred when preparing this dish. Pork or Spam are the most common meat choices; however, beef, chicken, bacon, ham, canned tuna, or shrimp can also be used. For a vegetarian option, mushrooms can serve as a meat substitute. The meat ingredients are chopped and combined with vegetables such as onion, carrot, or zucchini. These ingredients are sautéed in a pan with a little vegetable or sesame oil. Don't forget to add your Gochujang sauce!

Ingredients
  

  • 3 cups rice, cooked
  • 1 cup kimchi, chopped, juices reserved
  • 1 tbsp vegetable oil
  • 2 tbsp butter
  • 1 tbsp sesame oil
  • 12 oz Spam (or meat of your choice), chopped into bite sized pieces
  • 1/2 cup onion
  • 2 cloves garlic, minced
  • 2 eggs. fried or scrambled

For the sauce:

  • 1/2 tsp white pepper
  • 2 tbsp Oyster sauce
  • 1 tpsp Gochujang sauce, (or Siracha)
  • 1/2 cup + reserved juices from the kimchi

Instructions
 

  • Add 1 tablespoon of vegetable oil to a large wok or pan. Sauté the Spam or your choice of meat until browned. Remove from the pan and set aside in a medium-sized bowl.
  • Sauté the onions and kimchi until they begin to brown and become crispy.
  • Mix in the garlic and cook for 20 seconds. Remove contents from the wok and place it in the bowl with your Spam.
  • Add sesame oil and butter to the pan. Once melted, add the rice and toss until it begins to turn golden brown.
  • Add the sauce mixture to the rice and distribute it evenly.
  • Combine the contents of the bowl (kimchi, Spam, and onions) with the rice and toss well.
  • Garnish with cilantro and green onions. Serve with a fried egg and additional Gochujang sauce.
